How to Brew the Perfect Pour-Over Coffee at Home
Why Pour-Over?
Pour-over is the gold standard for tasting everything a coffee has to offer. Unlike a drip machine, you control every variable — the grind, the water temperature, the pour rate — and the result is a clean, vibrant cup that lets the origin shine through. If you've invested in quality single-origin beans, pour-over is how you honour them.
What You'll Need
- A pour-over dripper (V60, Chemex, or Kalita Wave)
- Paper filters (rinsed before use)
- A gooseneck kettle
- A coffee grinder (burr grinder preferred)
- Kitchen scales
- Freshly roasted single-origin coffee beans
The Golden Ratio
Start with 1:15 coffee to water by weight — so 20g of coffee to 300ml of water for a single cup. This is your baseline; adjust to taste once you've brewed it a few times.
Grind Size Matters More Than You Think
For pour-over, aim for a medium-fine grind — roughly the texture of coarse sea salt. Too fine and your brew will be over-extracted and bitter; too coarse and it'll taste thin and sour. If your brew takes longer than 4 minutes to drip through, go coarser. Under 2.5 minutes? Go finer.
Step-by-Step Brew Method
- Boil and cool your water to 92–96°C (off the boil for 30–45 seconds). Avoid boiling water directly — it scorches delicate coffee oils.
- Rinse your filter with hot water to remove papery taste and pre-heat the dripper. Discard the rinse water.
- Add your ground coffee and gently shake the dripper to level the bed.
- Bloom: Pour twice the weight of your coffee in water (40ml for 20g of coffee) in a slow, circular motion. Wait 30–45 seconds. This releases CO₂ and ensures even extraction.
- Continue pouring in slow, steady circles, keeping the water level consistent. Aim to finish all pours by the 3-minute mark.
- Let it drip through completely — total brew time should be 3–4 minutes.
